French Food Fridays : Chouquettes



Pronounced shoo-ket, these little darlings are the star of goûter (snack time at 16h00 or at the school gates at 16h30). Basically they are made from the same pâte à choux or cream puff pastry as Pommes de Terre Dauphine, the Paris-Brest pastry, profiteroles and the traditional wedding pièce montée.  Light as air and covered in sugar grains, they also exist in a savory version called gougères and in the non-politically correct version, pet-de-nonnes (literally "nuns fart") which sees the sweet chouquette deep-fried.
